The main concern about the consumption of nuts has always been the fat and cholesterol content, in fact nuts are plant products and are low in saturated fats and contain no cholesterol. In addition, the majority (more than 75%) of the fats found in nuts are the monounsaturated and polyunsaturated type. Unsaturated fats are the "good" fats it is important to distinguish between saturated and unsaturated fats:
• Saturated fats, found mostly in animal products, such as meat, poultry and dairy foods, as well as palm and coconut oils, are considered to be the "bad" fats. They can increase total cholesterol and LDL (“bad cholesterol”) levels, which increase accordingly the risk for cardiovascular disease.
• Unsaturated fats include polyunsaturated or monounsaturated fats: Studies have shown that unsaturated oil, contrary to the general belief, helps lower the LDL (bad cholesterol), which contributes to vascular obstruction and strokes. It also helps maintain the HDL (good cholesterol) levels
Hence, Al-Kazzi roasts its nuts at a specific temperature and for a specific period of time so as to conserve the nutritional value in every nut, as much as possible. As a result, Al Kazzi nuts remain cholesterol free within which the good oil (unsaturated) is preserved and without any substantial addition of harmful oils (saturated, trans fat). This is validated through several analyses by accredited laboratories.
